Have you ever used cardamom? It is this delicious spice that is similar to cinnamon or nutmeg. It goes really well with citrus too.
I love how the coconut palm sugar created little brown specks in the cookies. It makes them very visually appealing.
These cookies have a flavor that is perfect for tea or coffee.
- 2 1/4 Cups Oat Flour
- 1 Cup Coconut Palm Sugar
- 1 Cup Coconut Oil or Butter
- 1 Egg
- Zest of 1 Lemon
- Zest of 1 Orange
- 2 Tbsp Almond Milk
- 1 Tsp Vanilla Extract
- 1/2 Tsp Salt
- 1/2 Tsp Cinnamon
- 1 Tsp Cardamom
Preheat oven to 350 degrees.
In an electric mixer, cream your coconut oil or butter and coconut palm sugar together.
Beat in the egg.
Add in the almond milk (any type of milk) and vanilla extract.
Slowly add in the oat flour, a little at a time so it doesn’t look like it’s snowing in your kitchen. While that is mixing together add in the salt, lemon zest, orange zest, cinnamon and cardamom. You just want to quickly incorporate these ingredients and then turn off your mixer.
Place tablespoon or so of batter at a time on to your cookie sheets. You should get 12 cookies on each sheet. Use parchment paper lined cookie sheets to make it easier. I also used a small scoop to get the cookies nice and round in shape when baking.
Bake cookies for 10-12 minutes.
