Delicious and healthy quick jam used in oatmeal cereal bars make the perfect breakfast for the whole family, even picky eaters will love these. My picky eater ate half the pan last week. I was beyond thrilled!
I used to make a version from The Pioneer Woman but modified it make it healthier, adding the Spence twist to it. I also made the jam myself to exclude any extra sugar, making the filling just about the fruit.
- 1 1/2 Cups Whole Wheat Flour
- 1 1/2 Cups Oats
- 1/4 Cup Flax Meal
- 3/4 Cup Coconut Oil
- 1/4 Cup Hazelnuts, optional
- 1 Cup Coconut Palm Sugar
- 1 1/2 Tsp Baking Powder
- 1/2 Tsp Salt
- 1 Cup Cherries, thaw first if frozen, mashed
- 1 Cup Blueberries, thaw first if frozen, mashed
- 2 Tbsp Chia Seeds
- 2 Tbsp Honey
Mix mashed blueberries, cherries, chia seeds and honey together in a bowl. Set mixture in fridge for 45 minutes to thicken.
Preheat oven to 350 degrees.
In a large bowl combine flour, oats, flax meal, nuts, palm sugar, baking powder and salt. Using a pastry cutter or hands, work in the coconut oil until mixture is well combined and has pea sized lumps throughout.
In a 9″ x 13″ pan, press half the oat mixture into the bottom of the pan. Use hand to get it smooth and flat.
Spread the thickened fruit mixture carefully all over the oat mixture. It should resemble jam.
Top with remaining oat mixture, making sure it’s spread evenly across.
Bake for 35 minutes.
Once they cooled down enough to handle, I placed mine in the fridge to make cutting them in to squares a little easier.
This is an ideal way to get your kids to eat fruit plus you are sneaking oats, chia seeds and flax into them when they won’t even notice.
You can omit the nuts or use shredded coconut instead.
