Key lime pie….let me count the ways I love thee.
I have a problem. A serious problem. I love key lime pie. Not just little either. It’s so bad that I will go to restaurants just for the fact that they have key lime pie. I would order it for dessert even if I was so full that the thought of eating another bite made me sick. I just love it.
Then a few years ago I discovered a local creamery made key lime pie ice cream. Oh My!!! I was hooked. I was eating it a couple times a week. Yup. Bad.
So…imagine how I was when my doctor told me I should’t have dairy anymore. The hormones and antibiotics in the dairy where causing me problems. I found I can eat some organic brands but that’s another story. No more key lime pie ice cream.. Life was over.
What’s that….is that an angel singing!? Why yes! Yes it is….. it’s an angel in the form of coconut milk ice cream!
Hav you tried it yet? If not, you should! This is the answer to my life altering problem!
- 2 Cans Coconut Milk (full fat kind)
- 1/2 Cup Key Lime Juice
- 1 Tbsp Key Lime Zest
- 3/4 Cup Cane Sugar
- 1/3 Cup Graham Crackers, crushed
Mix together the coconut milk, key lime juice, zest and sugar in a bowl.
Pour the liquid mixture into your ice cream maker. Allow it to mix for awhile until it starts to get thicker, add in crushed graham cracker crumbs. I leave some pieces bigger because I like to see and taste the “crust” in the ice cream. It’s totally up to your preference how large or small you crush your graham crackers.
Follow the instructions on your ice cream maker. Store in a separate container and enjoy!
It has a delicious coconut lime taste. The graham cracker crust is a great addition to make it feel like you are having actual piece of key lime pie. If you like a stronger lime flavor, add more key lime juice.
