This stuff is AH-MAY-ZING!
Crumbles, crisps, whatever you like to call them, are just ones of those things I think you’ll find that almost everyone likes. It’s also a great way to get your kids to eat fruits and oats.
I honestly don’t think this can be defined as a dessert. I think it is perfect for breakfast too.
I used to make this all the time, but for some reason I haven’t in a long time. I can say that after making this one, I will be making it way more often again. I can’t wait to play around with fruit combinations.
This time I used strawberries and white peaches. It is ridiculously good.
- 3 Peaches (White or Yellow), peeled, pitted & chopped
- 2 Cups Strawberries, halved
- 1 Lemon, zest & juice of half
- 1/4 Cup Honey
- 2 Tbsp Arrowroot Flour
- 1 Cup Flour (Any flour you like to use will work)
- 1 Cup Rolled Oats
- 1/4 cup Flax Meal
- 1/4 Cup Coconut Palm Sugar
- 1 1/2 Tsp Cinnamon
- 1/2 Tsp Salt
- 1 Cup Coconut Oil or Butter, cold
Preheat oven to 350 degrees.
You can use whatever baking dish you like. I used an oval baker but a 9″ x 9″ pan will work as well.
Keeping the dishes to a minimum…place the fruit, honey, lemon juice and arrowroot directly in the baking dish and mix together. Spread evenly inside dish.
To make the topping, in a mixing bowl combine flour, oats, flax meal, sugar and cinnamon. Using a pastry cutter or your hands, combine the cold butter into the mixture. Combine until you have pea-sized lumps in topping mixture. You can also use a food processor to do this although I found using my hands worked best and kept the dishes down too.
Pour topping mixture over fruit mixture.
Bake for 40-45 minutes
I can’t even tell you how much I love this stuff other than I have to eat it for breakfast because I refuse to wait until dessert. I will be making this over and over again…..
